It’s Monday.

And I’ve had my menu plan done since Friday.

To quote London Tipton, Go me! 

Anyone else incredibly happy that show finally isn’t running 24 hours a day on Disney Channel?

I’m working on some dietary experiments and some exercise tweaks – more on that later, once I get them figured out a little more.

Here’s how I tackle my menu planning each week:

Monday
Paleo(ish) Teriyaki Chicken (testing this recipe – if it works again, I’ll post it this week)
Steamed Broccoli

Tuesday
Pot Roast (in the pressure cooker)
Red Potatoes
Carrots

Wednesday
Gluten, Grain and Garbage Free Chick-Fil-A Nuggets (this recipe is amazing!)
Roasted Cauliflower

Thursday
Fajitas
Guacamole
Salad

Friday
leftovers

Saturday
Burgers (with the weather getting warmer, I’m going to try to do a burger night once a week to play with different ideas – I’m thinking sun dried tomato and bacon burgers are up first)
Sweet Potato Fries

Sunday
We’re going back to Sunday night Brinner – maybe grain-free, dairy-free Swedish pancakes and bacon?

    • It’s definitely a pain and that can be somewhat literal. I use coconut oil to fry in and I’ve found it splatters a little more than most. They’re just so darn good, though. I’d love to figure out a way to bake them, but that texture is so pleasing the way it is.
