This is one of those weeks that I kind of wish I could just blink and have over.

Don’t get me wrong – I love Easter.

It’s just that Holy Week when there’s a birthday, Maundy Thursday at one church, a Good Friday service at the other and cookout, a family picnic in the foothills…and The Pastor doing Easter services at  two churches means things get a little bit hectic.

Add in to that one kid on Spring Break but not the other, and I’m scratching my head.

I’d briefly contemplated starting a Whole30, but set that aside as soon as I realized how crazy this week is going to be. I’m planning to start on the first if anyone wants to join in, and I’ll be sharing more this week about why and how.

This week’s menu plan is focusing on simple. Here’s how I tackle it each week:

Monday
Broccoli Beef (with a little orange juice and zest)
White Rice
Cauliflower Rice

Tuesday
Grilled Chicken
Roasted Veggies

Wednesday
The Pastor’s birthday – dinner out

Thursday
Gluten, Grain and Garbage Free Chick-Fil-A Nuggets (this recipe is amazing!)
Salad

Friday
Cookout – working on a few different drum stick ideas
Maybe a big veggie tray? Salad?

Saturday
Picnic at the ranch for lunch – maybe brinner when we get home? I’m dying to try this recipe for paleo Swedish pancakes!

Easter Sunday
Burgers
Guacamole
Sweet Potato Fries
Salad
Dessert – not sure yet

  1. I have been reading your blog for at least a few weeks now. So much of your thought process and how you express yourself resonates with me and I’m thankful for your inspiration. I am also going to be starting a Whole 30 on the first of the month as I have a crazy week ahead as well, that ends with a baby shower followed by Sunday’s activities and gatherings. I have been reading It Starts With Food and like everything I am learning. I already eat tons of veggies and fruit, and basically make pretty healthy choices, but my personal challenge will be that I’m not a big meat eater beyond chicken and I like eggs only about once a week. That and giving up popcorn and chocolate might hurt at first. Giving up dairy shouldn’t be a problem since I drink coconut milk- I do coconut everything actually, love it!
    So I will look forward to doing my first Whole 30 as I follow along with you! By the way, thank you so much for sharing the Zucchini Fritter recipe as I make that at least once or twice a week now and love them!

    • I think those zucchini fritters are my favorite!
      I’m adjusting a few rules on my Whole30 this time – my personal rules will go up later this week, but I’ll be adding in a protein shake once in a while. I wouldn’t recommend it until you’ve done a by the book one first, but I’m at the point that I’m comfortable playing with the rules. You might want to check out the Whole30 forums. I believe there’s a vegetarian board and that might be helpful for you!
