It’s the last week of February.
I believe that’s fully worthy of a what the heck?
Regardless of my feeling about how quickly this year is already flying by, it’s time to sit down and plan another menu. I have another family joining me in my predominantly paleo diet framework due to a new diagnosis, which is kind of nice (not the diagnosis, but having someone else eat this way). Our weather is also starting to warm up a bit…just enough to inspire a little grilling and a few kitchen experiments.

Pressure Cooker Braised Kale and Carrots

BBQ Chicken Pizza (I’ve got quite a few crust possibilities saved – anyone have a favorite they can recommend?)

PF Chang’s Chicken Lettuce Wraps (paleo-ized with coconut aminos instead of soy)

I haven’t tried the coconut aminos. How does it compare to soy sauce?
It’s definitely a milder flavor and not as salty. I was never a big soy sauce fan, so I really like the subtlety of coconut aminos. I just wish they weren’t so incredibly expensive!

YAY for the grill! I can’t wait till it’s warm enough to fire ours up.
We’ve used ours twice this week and I always forget how much easier it makes meal prep to send the meat outside with my husband!
