menu plan monday: 01.28.13

Last week’s menu plan was left on the roadside pretty quickly when the flu showed up at our house.

It was fun.

I kept the pressure cooker going with bone broth, and I think that helped me keep from getting sick (along with my Whole30 eating and exercise). Score one for real food!

This week, I’m thinking easy. We seem to have stumbled into a little busy season. I’m on my last few days of this Whole30. My plan is to take a bit of a break on Wednesday (pancakes!) and get back to another round on Thursday. I need to do a little experimenting with nightshades, and the Whole30 seems to be the best place to do that from.

Tuesday (allergy shots)
The best chicken you’ll ever eat (yeah, it’s really, really good – marinate in the morning)
Sweet Potato Fries
Pressure Cooker Braised Kale and Carrots

Wednesday
Easy Peasy Pancakes
Bacon
Scrambled Eggs

Thursday
Chicken and Vegetable Lo Mein (prep in the morning)
White Rice (cooked in bone broth – for the family)

Friday
Butter Chicken
Cauliflower Rice (me)
White Rice (the kids)
Steamed Broccoli

Saturday
Fajitas
Salad
Guacamole

Sunday
No clue. Really.  I think I’m out of ideas. Anything good and easy you can recommend?

    I am loving your cabbage instead of noodles idea. And that chicken. With a name like that, you know I must try it. :) Bone broth just the thing to keep healthy – I love that, too and keep and ongoing crock with it this time of year.     • I’ve been making at batch of bone broth at least once a week, and I think that, coupled with my diet and exercise, has helped this to be a far milder flu than what the rest of my family came down with. Lots of garlic too!
