I love the Monday of a 3 day weekend. It’s like a little bonus day. Even on ones that are going to be busy, I wake up and smile.
This week is busy. Busy, busy, busy. We’re still adapting to being back to school, and what it means when one of those schools is 20 minutes away. It’s good, though. I am definitely in the golden days of it – sleeping like a rock, feeling awesome and with energy coming out of my ears.
Come back on Wednesday when I’m sharing my menu planning process. It’s something I get asked about often and that I think I’ve gotten down to the best way for me. And Thursday, I’ll tell you how Pinterest has helped save me time and give me much needed meal inspiration.

Blackened Chicken and Avocado Sauce
Zucchini Noodles (me)
Shredded Beef Taco Roast
eating out (appointments everywhere!)
Mashed Cauliflower (me – reserve half the head for Friday night)
Tri Tip (on the grill)
Cauliflower Rice (using the method in Well Fed)
Rice Pilaf (need bone broth)
Potluck at LG church
Chocolate Chili (double and save half for Sunday potluck lunch)
