I’ve spent the better part of this month either without a meal plan, or completely ignoring it.
There’s really just nothing positive about that.
I’m past hoping for normal. At this point, I’d be happy for consistent. It’s the busiest time of year for us, and is even a little more crazy this year because The Pastor is serving two churches. This week, I’m trying to get back to some sort of routine, even if it’s a different routine than I’ve ever done before. After a spectacularly lazy Thanksgiving break, I’m back to meal planning and have also been using the Home Routines app to try to keep the house tamed. (quick review: it really, really works!)
This week, we have four doctor’s appointments, physical therapy, and The Pastor is leading two different evening Advent studies. Thankfully, the weekend seems free…so far…and I intend to keep it that way. I’m trying to keep meals quick, flexible and easy on time.
A quick question: can anyone recommend a not-too expensive pressure cooker (under $100)? I *think* that’s what I’m asking Santa for, but I’m also a little bit frightened of them.

Barely Wilted Spinach (bit of coconut oil in the sautee pan, a few red pepper flakes, spinach, let it sort of melt together and finish with a little fish sauce)
Wednesday
Grilled Tri Tip (seasoned with salt, pepper and garlic)
Roasted Rosemary Roots (from Pracitical Paleo)
Thursday
Rosemary Pot Roast and Cauliflower Butter Rice (adding some carrots to the roast)
Roasted Fingerling Potatoes (for the family)
Steamed Broccoli
Friday

Coconut Flour Apple Pancakes (great recipe!)
